Since this is a question that comes up on various Discords from time to time, it seems appropriate to have an ongoing searchable list of what these are. Thanks, didn't even see it there. Added the one for the Grendel too after spotting it.

it would also be nice if any unwanted files could be turned off. So being able to start quest content when the player wants to. Or turn off unwanted skins and items.

You can simply disable any of the VCs before starting a new game if you want to wait and activate them later. Just don't do that if the save already has them attached.

kgcdoom.esm - At Hell's Gate (I'm not 100% sure if this one's considered official or not)

Not sure if At Hell's Gate ought to be on the list since it's not made by Bethesda themselves even though they seem to be treating it as quasi-official.
